He served as a sauté chef at The Cookhouse in San Antonio, Texas, from July 2018 to March 2019, showcasing his talent and creativity in the kitchen. Prior to that, he worked at Cured at Pearl in 2017, also in San Antonio, where he continued to hone his skills. His early work as a Pizza Prince at Trophy Brewing Company in Raleigh, North Carolina, from 2014 to 2016, reflected his versatility and love for bringing joy through food. Throughout his career, Josiah was celebrated not only for his culinary talent but also for his generous spirit and the warmth he brought to every table.

The towering gentle giant of a man. That our nephew, Josiah Elstak, is no longer in this earthly realm with us is stunning and unfathomable. I was never blessed to eat his food but I saw the pics and followed his journey as a chef. I looked forward to seeing him soon, this very month even, and partaking for the first time. Alas, that meeting is not to be, but I now look forward to seeing you in the heavens, Josiah. Rest with God!”
